Our ethos.
Health & sustainability
Food, health and sustainability have the power to transform the way we live - for better, or worse.
We understand the very real impact that food has on our planet and our wellbeing and we carefully craft our business and our menu to respect our seasons, our soil and our health.
Waste.
We minimise food waste wherever possible, through menus that use and rotate fresh produce and we commercially compost any food scraps or waste from our kitchen.
Our other waste streams are separated and we recycle packaging and materials and upcycle whatever we can.
Water is our most precious resource.
We are emerging from the hottest and driest summer, which has been buffered by the driest spring and autumn seasons.
We are actively working to create menus that minimise our water footprint, by offering seasonal plant-based dishes, using only grass fed, hormone free meats and always exploring the water intensiveness of our menus and our operations.
This is ongoing, as we realise the severity of the conditions in Western Australia and enter into a drier than normal 2024 winter season.
